Dat Pascal ook een wijnman ging worden was al vroeg duidelijk. Altijd had hij de ambitie om zelf zijn eigen weg in te slaan. Zo ontstond in 1987 het huis Pascal Jolivet. Hij was zich ervan bewust dat de terroir van Sancerre de mooiste Sauvignon Blancs kunnen voortbrengen. Daarom zocht hij voor drie bodemsoorten die als
